Strawberry Cream Cheese Popsicles

On a scorching hot afternoon, nothing could be better than having a cool treat to chill you down. Homemade popsicles are my son’s all-time favourite cool treat. Whenever there are fresh and cheap berries in the market, I will make a bunch of popsicles and stock them in the fridge. The berries season is back now, and it’s time to dig out my popsicle moulds again.
Homemade popsicles are not necessarily icy. They can be smooth and creamy instead. Let me show you how to make these creamy-dreamy popsicles with just 4 ingredients – strawberry, cream cheese, Greek style yogurt and honey. The popsicles will be ready for freezing in less than 15 minutes.
Cream cheese is the key ingredient that makes these popsicles so smooth and creamy without any iciness, almost like ice cream. You can use either Greek style yogurt or normal plain yogurt to thin the cream cheese. But, I prefer the former as it is thicker and creamier. Honey or sugar helps to bring out the sweetness of the fruits. How much honey or sugar you need will very much depend on the fruit you choose. Don’t just limit yourself to strawberries. Any kind of berries that are fresh makes good substitute. I had even tried using frozen blueberries, and the popsicles turned out to be just as delicious!
These popsicles are so satisfying that my dad, sis and nephew who were here for a visit could attest. Look at those photos of my son. These popsicles really make his day. He enjoyed every bit of them and couldn’t be bothered with his messy fingers and dirty shirt while I took some shots of him eating them. He ate three popsicles on that afternoon and told me that he still had the stomach for one more. I almost fainted.

Can a 16 months toddler take this?

how long till it go stale? 2weeks?
Debbie: You can freeze it for 2-3 weeks. I think they will be gone in less than a week. 🙂
Can I use this recipe & replace the strawberry with green tea powder or mango? Any other options besides the popsicles mould? Can I put everything inside a freeze safe container
Lynn Chua: It should be fine to substitute strawberry with mango. However, I’m not sure about green tea powder. You can use recycle yogurt cups, jelly mould or ice cube tray.
