Lately I have tried out many recipes from Annabel KarmelN1 Family Cookbook magazines (spring and summer editions) in my cooking. I love its wide selection of kid-friendly recipes which are both simple to follow and wholesome. Also, the required ingredients and seasonings are quite basic and easily found in the supermarkets. Besides that, the recipes include many fun and healthy ideas suitable for all ages from babies to adults. From the photos, they look very appetizing!! So far, her recipes haven’t disappointed me. The dishes turned out to be very tasty. More importantly, my family loves them. This led me to bookmark more and more recipes from these two magazines.

This chicken pie with cheesy mash topping is one recipe from Annabel Karmel Family Cookbook magazine that I tried and found to be Awfully Delicious! My husband thinks that it will be even better if it is served with some gravy to compliment the mashed potatoes which can get a bit dry without it.


I had modified some ingredients and steps in this recipe for the convenience of parents or caregivers who seldom cook Western food. For ingredients, I had substituted leek with celery and opted for dried parsley instead of fresh parsley. Of course, you are free to follow the original recipe if you can find leek and fresh parsley. I find that these substitutions have not affected much the taste of the final dish. As for cooking the chicken breast, I used the boiling method instead of the oven to poach it. This method will suit those who are lazy to use oven (just like me, hehehe!). I included both the original and modified recipes for your reference.

There is only one reservation I have on this recipe. It’s not really a wholesome dish for your toddlers as it uses lots of high calories ingredients such as cheese, butter and milk. But if it is just eaten moderately on an occasional basis, then it will certainly be a great one-dish meal for your family. I’m sure it will put smiles on your toddlers especially your fussy eaters when they see this comforting dish on the dinner table. For those who are bored with Asian food, try this one out for a change!

    I love baked cheese! I recently made some chicken pot pie which is similar but instead of cheese, I use puff pastry to bake the top. Yours look really yum 🙂

    Milk and cheese are good sources of calcium 🙂 …does it make sound more wholesome? What I like about this chicken pie is that because of the mash topping you used (instead of puff pastry), makes it so much convenient to eat.

    i made chicken pie some weeks ago, and used mustard in the seasoning, and also puff pastry for the top. it was nice but i wasnt too satisfied with the sauce which wasn’t thick enough in my opinion (maybe cos i didnt use cheese! lol)

    I had a nice chicken pie on the SQ flight back home from Adelaide. My husband thought it was cheese inside the fillings that made it so creamy. But I’m not too sure. Must try yours!

    I tried making chicken pie the Hainanese way. Not really successful. I like most was the buttery puff pastry. I added some mash potato into the stew to thicken into gravy.

    Next time can try using mash cauliflower to substitute the mash potato topping.

  22. This is a dish, which in France, we call “hachis parmentier”. You generally use whatever leftover meat you have, you grind it and season it and hide it under mashed-potatoes. Children love it because it’s easy to eat. It’s a great way to use leftovers (beef, veal, duck, chicken, lamb, etc.)

    You are welcome 🙂 , I’ve recently found out that secondary students nowadays seem to have ‘no time'(especially those with working parents) to cook their own lunch, thus always bingeing in fast food, etc. It would be of great help if you could reccomend some easy but appealing food recipes for them to carry out, thus leading to a much better and healthier diet instead of their normal ‘carl junior’s on monday and mc’d on tuesday’ and so on. I’m very sorry if I’m making such a big fuss, resulting in making your life frustrating. Thank you for your offer though , (to send you an email). 🙂

      Alivia: Sorry for the late reply as I can’t access to internet due to the toilet upgrading program which started on this Tue. You can find some simple recipes under the categories of rice, pasta and noodles. They can also try simple fried rice, simple fried noodles and homemade burger (meat/ salmon).     Cheesy mash is one of my all-time favourite comfort foods and it works wonders to diguise a few vegetables in for my 2 year old. Yay for another recipe to add to my “kid-friendly collection”.

    going to try this. i make my chicken pot pie the same way, but use croissants for my top. just open tube and roll on top, makes the flakiest crust.

    hi love this recipe! am making this for my 18 mth toddler. can I omit the white wine vinegar? btw since the recipe has lemon juice, wont it be too sour with the vinegar?
