Chicken and potato stew

My mum taught me how to cook this one-dish meal.

Ingredients:
1 red onion
2 chicken thighs (with or without bone) – marinate with light soya sauce, sugar and cornflour
2 potatoes
1 large carrot

Seasonings:
1 tbsp oyster sauce
1 tsp light soya sauce
Dash of dark soya sauce
1 tsp concentrated chicken stock (optional) – mixed with 150 ml water
Dash of sugar and pepper
1 bay leaf (my personal add-on)
Corn flour (for thickening)

Method:
1. Heat the oil and sautee the onion until fragrant.
2. Add in all the ingredients and seasonings and stir well.
3. Simmer with medium heat until all are cooked.
4. Thicken with cornflour.

Below is another variation I cooked for my son. I used chicken breast, baby sweetcorn and add-on japanese edamane (salted soya bean). No dark soya sauce. Sometimes I will add some fresh mushrooms too.

    Phay: Although I have not tried pork before, it sounds fine to me. Instead of sliced pork, u can also try minced pork. In this case, u may need to dice the potatoes and carrot into smaller cubes to reduce the cooking time. Hope your son will love it.

    Homeladychef: Sometimes, I will add fresh shitake mushrooms and cook extra amount enough for both lunch and dinner. Hehehe!

    i made this for my girls’ lunch bento box for school. they loveeeee it ALOT!

    my younger girl had one complain, though – “mummy you gave me too little of the potato. i was still hungry!”

    i was stunned cos she (my younger girl) rejects all potato dish, except mashed potatoes.

    skinnymum: although my birthday is just over, this comment is definitely the best gift for me. Hehehe! If I am not mistaken, your dd prefers those soft-type potatoes with gravy such as russet potatoes. Buy more of these to cook for her. 😉

        I did it this afternoon, yummy! I added chinese dried mushrooms, next time shall use button mushrooms instead (chinese mushroom too strong a taste)

        But this recipe is a keeper! I didnt have to stand at the stove, just put everything in to the pot and leave it to simmer on its own.

          Sandr: Thanks for your kind feedback! Glad you like it. Maybe you can try fresh shiitake mushrooms (chinese mushrooms) instead of dried ones. Blanch the fresh ones over boiling water before cooking them. Hope it helps. 😉

    May i ask if i do not add chix concentrated stock, we just add 150ml of water?

      Mae: The taste will be lighter. If you use water, you can still adjust the taste (if necessary) at the end of the cooking process. Instead of concentrated chicken stocks, you can substitute with homemade chicken stock too. Hope it helps!

    hi, can i check with you, if i choose to add minced meat instead, do i add the potatoes and carrots first, stir for ahwile and then add the pork? WHich way is correct?

    i know this is a tricky question but at what age do you recommend such meals to be given? my baby is now 16 months and she’s starting to crave for foods with more flavour than her usual meal which is usually bland with no salt. So i’m wondering if i can start introducing such meals to her.

      J: As I have mentioned in my “ALL RECIPES” and “ABOUT” pages, the recommended age will be 2.5 years old and above. Certain ingredients and seasonings used in my recipes may not be suitable for your baby due to allergy and health issues. So, if you want to try them, please make the necessary adjustments. 🙂

    Hi, may I know this recipe is for how many servings? Also, would the taste be ok if I prepare this a couple of hours in advance and then pop it into a thermal pot till meal time?

    Hi. I always find the chicken meat too tough like overcooked if I were to cook the chicken together with the potatoes n carrots cos potatoes took a longer while to be cooked.. what shld I do?
