  Have you seen a TVB Hong Kong cooking show called “SO FAR 苏 GOOD”? It is hosted by Susie Wong (苏施王). Baked eggplants with cheese

This is a VERY VERY simple dish and it is my first attempt for finger food (“tapas”). Ingredients: Eggplants Grated cheese (I used mozellara) Method: 1) Sliced eggplants thinly. Banana pancake

I found out this wonderful recipe after reading the post from here. As compared to my previous recipe, this one is lighter and fluffier without adding the wholemeal flour.
