Lemongrass Pandan Drink

RECIPE FOR LEMONGRASS PANDAN DRINK

Ingredients:
4-5 stalks lemongrass (depending on the size)
6-8 pandan (screwpine) leaves (depending on the size)
1 litre water
Rock sugars (to taste)

Methods:

  1. For lemongrass, discard the outer layer and cut off both ends (about 1/2cm). But, you may use  more of the white part as the green part can cause the drink a bit of bitterness. Pound the bulb end of the stalks lightly. Cut into pieces.
  2. Wash the pandan leaves and tie them in a knot.
  3. In a pot, add water, pandan leaves and lemongrass. Cover the lid and bring to a boil. Then, lower the heat and allow it to simmer for 30 minutes.
  4. Add rock sugar to taste. Stir until dissolved.
  5. Turn off the heat and strain the drink. Served it warm or chilled.

    I just boiled some but mine turned out with a bitter taste. Any idea where I went wrong? I added in the bulbs (after pounding them lightly), is this correct? Hope you can help so that I can try again.

      Cassie: Once you have added the rock sugar, the drink will give you a sweet taste. Did you taste it before adding sugar? How long have you boiled the drink?

    I added minimal rock sugar just enough to sweeten the drink. Tasted only after this step… It left with a bitter after taste. Simmered at low heat for 1/2 an hour before adding the rock sugar, with the heat still on. Is this correct?

      Cassie: It sounds to me that you have done it correctly. I suspect that the green part could make the drink bitter. Maybe you try to exclude these parts in your next attempt. Do let me know the outcome after trying it out. 😉

    You know I don’t have a rock sugar because I just saw your drink this morning and it make me excited to do it because I have plant of lemon grass in my backyard never use it ,it’s is ok used brown sugar

    Hi, After I peel off the outer layer of the lemongrass stalk, I found white powder on the stalk. Not sure is it pesticide powder or lemongrass powder. Please advise.
