Does your child like muffins? My son does. He will beam from ear to ear whenever he sees me busy making muffins in the kitchen. He has been my loyal muffin supporter from day one I learned making homemade muffins. Sometimes, he will request me to bake some for him to bring to school which makes me love making muffins even more.

 

Making muffins is indeed easy and has the highest rate of success as compared to making cake and bread. Basically, there are two methods in making muffins – the mixing method and the creaming method. (Please refer to THIS POST for more tips on how to make muffins). The former has always been my first choice when I am short of time as it involves lesser work. But, don’t get me wrong as different method yields different texture. I still enjoy using the latter method when I have enough time to play around my kitchen appliances.

This orange date walnut muffins recipe is one of my favourite muffin recipes using the mixing method. Unlike my previous muffin posts, this recipe is going to take you a bit more time to prepare the ingredients such as grating orange zest, squeezing orange juice, pureeing date as well as roasting walnuts. These extra steps may sound tedious but in return, you will get light, yummy and healthy homemade muffins, which I think it’s a pretty good trade-off. These delicious muffins are filled with wonderful citrus flavour and nutty walnut crunch. They will surely make a perfect teatime snack and even a good addition to your kid’s lunchbox.

 

One lovely thing about this recipe is that orange juice and dates are used as natural sweeteners. By having lesser sugar, it makes these muffins a lot healthier than other sugar-concentrated snacks. These muffins are not only just pleasing your palate, but loaded with plenty of important nutrients to boost your child’s immunity system. Orange, best known for its vitamin C content, is a powerful antioxidant. Date is rich in vitamins, dietary fiber, calcium, potassium and magnesium, which are important for muscles, stomach health, colon health, digestion, bones and teeth. Walnut is an excellent source of vitamin E, heart-healthy omega-3 fatty acids, protein, fiber and essential minerals, which are required for optimum brain function and the regulation of a healthy immune system. Given this, these muffins are an ideal way to introduce these superfood into your child’s diet.

    Love the aroma of the orange zest. But you wrote 2tbsp? From 1 medium orange? 😕
    And just to check, the baking powder is it 1 tsp or tbsp?
    And you have 2 steps on roasting walnuts too

      Grace: Thanks for your compliment and kind feedback!! You should get about 2 tbsp of grated orange zest of one medium orange. How much did you get then? 1 tbsp of baking powder.
