HONEY BALSAMIC CHICKEN DRUMSTICKS RECIPE

Ingredients:balsamic vinegar, honey balsamic chicken drumsticks, food for toddlers, drumnettes
6 chicken drumsticks (about 70g each) – note 1
Dash of freshly ground black pepper

For the marinade:
2 tsp balsamic vinegar – refer to photo
4 tbsp light soy sauce – note 2
4 tbsp honey – note 3
1 tsp garlic (crushed)
1 tsp grated ginger

Methods:

  1. Put the balsamic vinegar, soy sauce and honey in a bowl.
  2. Remove the papery skin from a clove of garlic and put it in a garlic crusher. Squeeze the garlic into the bowl. (note 4)
  3. Peel a piece of root ginger and grate it on a fine grater. It’s easier if you freeze the ginger first. Take care not to scrape your fingers on the blade.
  4. Combine all the ingredients and set aside.
  5. Slash the drumsticks with a sharp knife and season with freshly ground black pepper.
  6. Put the drumsticks in an ovenproof dish, then pour over the marinade in step 4 so it coats the chicken.
  7. Cover the dish with cling wrap and put the marinated chicken in the fridge for 20 minutes.
  8. Preheat the oven for 200°C. Bake the drumsticks in the marinade for 40-45 minutes or until cooked through, turning (with a pair of tongs) and basting (note 6) the drumsticks every 10 minutes or so.

Note:

  1. You can use up to 8 chicken drumsticks for this recipe.
  2. I used Lee Kum Kee premium soya sauce which is less salty. If you find that your soya sauce is salty, cut down to 3-3½ tbsp.
  3. I use no water added honey.
  4. I do not have a garlic crusher. My cheater’s method is to use a knife/ chopper to smash garlic until flatten and mince it.
  5. If you are short of bowls, try marinating the chicken in a small plastic food bag.
  6. Basting is a technique of brushing, spooning or pouring liquids over food, usually meat and poultry, as it cooks. It will keep the food moist, add colour and flavour of the food you are cooking. You can do basting with any tool you may have in your kitchen ranging from a simple spoon to a baster. (Source: TLC and Wikibook)
  7. To save the thicken marinade,  add a bit of water into the ovenproof dish to dilute the sauce. Simmer the sauce slightly to thicken it again. Then drain and pour over a bowl. You can drizzle it over the chicken drumsticks or serve with other side dish/pasta dish.
  8. The cooking time varies depending on the size of your drumsticks.

    I baked it for dinner today and served it with white rice. My son loves it so much that he had two drumstickz. I didn’t know he has such a huge appetite. I’m training him to feed himself and this dish is perfect. Thanks! On personal note, balsamic vinegar really don’t taste like the normal tangy vinegar. Rather, it is more akin to an aged red wine (less alcohol).
