Baked eggplants with bolognese sauce

HOW TO MAKE BOLOGNESE SAUCE

Ingredients:
240g minced meat/ beef (If you are a non meat eater, substitute with fresh mushrooms)
60g fresh mushrooms – chopped (If you don’t have mushrooms, substitute with meat/ beef)
1 medium size onion – minced
2 cloves garlic – chopped
1 tin diced tomato (412g)
1 tsp dried basil leaves or mixed Italian dried herbs

Seasonings:
2 tbsp tomato paste
1 tbsp tomato ketchup
1 tbsp sugar
2 pieces of bay leaves (optional)
200 ml stock – I used 7g Maggi chicken concentrated stock with 200ml water
Dash of ground black pepper
Pinch of salt
Cornstarch solution for thickening (mix 1 tsp corn flour with 1 tbsp water)

Method:

  1. Heat up a saucepan with oil.
  2. Sauté onion, garlic and dried basil until fragrant and onion become translucent.
  3. Add in minced meat/ beef and stir-fry until it is cooked.
  4. Add in chopped mushrooms and stir-fry until the mushrooms turn soft.
  5. Add in diced tomatoes, tomato paste, tomato ketchup, stock and bay leaves and stir well. Bring to a boil and simmer under low heat for 30 minutes. The last 10 minutes, simmer with lid half cover.
  6. Stir occasionally to prevent it from catching the bottom of the pot.
  7. Add in sugar, black pepper and salt. Thicken with cornstarch solution.

Note:

  1. This sauce can be used for pasta and pizza. For any leftover, you can freeze it for later usage.
  2. If you want to speed up the preparation process, you can cook it in advance.

    Fantastic looking eggplants with bolognese sauce! I have to admit that most of the time I don’t know what I should do with eggplants so I seldom buy them. Now, after seeing what you made, it gives me another idea!

    This sounds and looks perfect! Eggplant is my favorite vegetable so I would not give up trying to get my 4 kids to love it! You are right, trying several times in different ways really works with kids. Not being to pushy also helps. My pickiest eater only recently declared that he changed his mind and now loves eggplant!!!Yay!

    In the recipe for bolognese sauce you offer a vegan option. Although your instructions would make the sauce vegan, the cheese in this part of the recipe rules out a vegan dish…so maybe it should just say ‘vegetarian’?

    That’s what I love about FoodBuzz–seeing what people on the other side of the world are cooking today. I live in Iowa in the middle of the United States, and am fortunate to have space for a large garden. It’s early in the season here, so I won’t have my own eggpplants for another two months.

      Annie: I totally agreed with you! Foodbuzz is a great platform for me too. Unlike you, space is very limited here so it is very expensive to own a large garden. I’m so envy! It’s great to get close to nature. I hope I can do that when I retire. Still a long way…..! Hahaha! 😉

    Wow…you have made the eggplant dish look very delicious. I would love to have it even if I hate vegetables 😀 I know how hard it is to feed picky kids. We moms just have to be very creative. My daughter is one of them. She is a big girl now but still picky 🙁

    jusr found your recipe and it looks great! I cook this very often for my family, found it at a restaurant years ago. I was wondering what does soaking the eggplants in vinegar add to the vegetable, does it help to hold more nutrients or soemthing?? just wondering because I have never done that before. But i’m defintely looking forward to your bolognese sauce:-)
