Strawberry crunch

STRAWBERRY CRUNCH RECIPE

Serve: 2-3

Ingredients:
150g strawberries (about 6-8 medium sized)
4 tbsp fresh orange juice
50g whole porridge oats
3 tbsp sunflower seeds
3 tbsp pumpkin seeds
2-3 tbsp clear running honey
12 dsp/ 8 tbsp thick natural bio yoghurt (I used Pauls brand)

Methods:

  1. Cut the green stalks and leaves from the strawberries and then thickly slice the fruit. Put the strawberries in a bowl and add the orange juice. Set aside.
  2. Put the oats in a frying pan and dry fry over a medium-low heat for 3 minutes. Turn the oats occasionally with a wooden spoon to make sure they cook evenly.
  3. Add the sunflower and pumpkin seeds and dry fry for another 2 minutes or until light golden. Take care – the pumpkin seeds may pop a little!
  4. Take the pan off the heat. Stir in the honey – it will sizzle at first but keep stirring until the oats and seeds are coated. Allow to cool slightly.
  5. Put a layer of the oats in the bottom of each glass. Add 2 heaped dessert spoonfuls (dsp) of yoghurt and then some of the fruit. Add another layer of each.

Note:

  • If you want to speed up your preparation in the morning, you can toast oats and nuts the night before and store them in the fridge. Then you just need to assembly all the required ingredients during breakfast.
  • For a tasty twist, try swapping strawberries with any choice of your favourite fresh fruits such as kiwi fruits, bananas, mangoes, blueberries and peaches, or even a mixed combination of them.
  • You can still adjust the sweetness of this parfait by adding honey before serving.

    They look really great! ave you tried making Bircher Muesli as well? It’s easy and can be assembled the night before and just top off with fruits upon serving. Absolutely love it with a drizzle of maple syrup!

    Back when i first started college, I NEVER ate breakfast…or if I did, it was usually something like poptarts…blech. Now I’m totally a breakfast person! These strawberry crunch parfait look delicious and super nutritious!

      Lingzie: Thanks! Not sure about Pg, but Korean strawberries are cheaper than US strawberries in SG. Somemore, they are in season now and sold at special offer in the supermarket. 😉

    The momentum is just not there when it comes to making breakfast. When I was staying with my parents, my breakfast was not so healthy – local breakfast(savory kuehs), bread with fish fingers and ham(processed food) etc…
    After I got married, I was too lazy and got used to granola/muesli with milk. But should be healthier? Heee heeee…..

      Happy Cook: You’re right, it can be served anytime of the time. Strawberries are in season now. I bought these Korean strawberries from Cold Storage @ 4 small punnets for S$10. 😉

    Can I use quaker oatmeal? I’ve never toasted whole oats. Is it crunchy or chewy? Strawberry is my son favourite too! I bought the driscole one in NTUC finest and cant wait to make it for my little boy.

      Evelyn: I haven’t tried instant oatmeal yet. I think rolled oats (porridge oats) will give a more crunchy texture than instant oats. Oh I love Driscoll’s strawberries! They were on offer by Cold Storage today. 😉

      Kellempxt: I bought mine from Cold Storage (Tampines One). If Korean strawberries are in season, you can easily find them in either wet market or supermarket ie NTUC, Giant etc. But I see more US strawberries on sales now. 😉
