RECIPE FOR CHICKEN PIE WITH CHEESY MASH TOPPINGSource: Adapted and modified from Annabel Karmel Family Cookbook (summer edition)
Serves: 4-5
Makes: 5 ramekins/ 2 pint oven proof dish
Ingredients (original):
3 chicken breasts (12oz total weight)
2 carrots (8oz), roughly chopped
½ leek, roughly chopped
1 small onion, finely choppedSeasonings (original):
1oz/ ¼ stick butter
1oz/ 2 tbsp plain flour
2 tsp lemon juice
1½ tbsp white wine vinegar
10fl oz/ 1¼cups full fat milk
5fl oz/ ½cup chicken stock
1 tbsp parsley, chopped
2oz Cheddar cheese, grated
Salt and freshly group black pepperFor the topping (original):
1lb 7oz potatoes, peeled and chopped into large
3 tbsp milkIngredients (modified):
3 chicken breasts (390g total weight)
1 carrot (130g), roughly chopped
1 celery (60g), roughly chopped
½ white onion (70g), finely choppedSeasonings (modified):
30g butter
2 tbsp plain flour
2 tsp lemon juice
1½ tbsp white wine vinegar
1¼ cup milk
½ cup chicken stock
1 tbsp parsley, chopped (I used dried parsley)
55-60g Cheddar cheese, grated
Salt and fresh ground black pepperFor the topping (modified):
3 Russet potatoes (570g total weight), peeled and chopped into large pieces
3 tbsp milkMethods:
- Poach the chicken with either one of the following methods:
-> Preheat the oven to 180°C. Put the chicken into an oven-proof dish, season and cover with boiling water. Cover the dish with foil and poach the chicken in the oven for 25 minutes or until just cooked. (original)
-> Wash, rinse and pat dry the chicken. In a medium pot, add the chicken and fill with water or broth 1 inch above the chicken. Add 1 teaspoon of kosher or sea salt to the water. Bring the pot to a boil and immediately turn the heat to low. Simmer for 2 minutes. Remove the pot from the heat and cover. Let it sit for 20 minutes. Save the poaching liquid for cooking later.- Melt butter in a saucepan. Add the onion, celery and carrot and cook for about 7-10 minutes until just softened.
- Add the vinegar and cook until it has evaporated, then add the flour and cook for a further minute.
- Add the lemon juice, then gradually add the milk and stock, stirring all the time until the sauce is thick and simmering.
- Add ½ of the cheese and the parsley, then season well.
- Chop the poached chicken into small cubes and stir into the mixture, then pour it all into a 2-pint oven-proof dish or divide the portions between 4-5 ramekins.
- Cook the potatoes in boiling salted water until tender. Drain and mash with the milk, then spoon over the top of the chicken mixture and sprinkle with the remaining cheese.
- Bake in a preheated oven at 180°C for 30 minutes until golden brown on the top and hot in the middle.
I love baked cheese! I recently made some chicken pot pie which is similar but instead of cheese, I use puff pastry to bake the top. Yours look really yum 🙂

Milk and cheese are good sources of calcium 🙂 …does it make sound more wholesome? What I like about this chicken pie is that because of the mash topping you used (instead of puff pastry), makes it so much convenient to eat.

i made chicken pie some weeks ago, and used mustard in the seasoning, and also puff pastry for the top. it was nice but i wasnt too satisfied with the sauce which wasn’t thick enough in my opinion (maybe cos i didnt use cheese! lol)

I had a nice chicken pie on the SQ flight back home from Adelaide. My husband thought it was cheese inside the fillings that made it so creamy. But I’m not too sure. Must try yours!

I tried making chicken pie the Hainanese way. Not really successful. I like most was the buttery puff pastry. I added some mash potato into the stew to thicken into gravy.
Next time can try using mash cauliflower to substitute the mash potato topping.

This is a dish, which in France, we call “hachis parmentier”. You generally use whatever leftover meat you have, you grind it and season it and hide it under mashed-potatoes. Children love it because it’s easy to eat. It’s a great way to use leftovers (beef, veal, duck, chicken, lamb, etc.)

You are welcome 🙂 , I’ve recently found out that secondary students nowadays seem to have ‘no time'(especially those with working parents) to cook their own lunch, thus always bingeing in fast food, etc. It would be of great help if you could reccomend some easy but appealing food recipes for them to carry out, thus leading to a much better and healthier diet instead of their normal ‘carl junior’s on monday and mc’d on tuesday’ and so on. I’m very sorry if I’m making such a big fuss, resulting in making your life frustrating. Thank you for your offer though , (to send you an email). 🙂

You can find some simple recipes under the categories of rice, pasta and noodles. They can also try simple fried rice, simple fried noodles and homemade burger (meat/ salmon). Cheesy mash is one of my all-time favourite comfort foods and it works wonders to diguise a few vegetables in for my 2 year old. Yay for another recipe to add to my “kid-friendly collection”.

going to try this. i make my chicken pot pie the same way, but use croissants for my top. just open tube and roll on top, makes the flakiest crust.

hi love this recipe! am making this for my 18 mth toddler. can I omit the white wine vinegar? btw since the recipe has lemon juice, wont it be too sour with the vinegar?

May: Depending on their appetite. You can prepare some side dishes such as blanched broccoli and mushroom soup to go with it. 🙂
