Chicken with hoisin sauce

RECIPE FOR CHICKEN WITH HOISIN SAUCE

Ingredients:
3 chicken whole legs

Seasonings:
3 tbsp hoisin sauce (Lee Kum Kee)
1 tbsp oyster sauce
2 tsp light soy sauce
Dash of sesame oil and pepper
Cornflour solution for thickening (dilute cornflour with water)

 

Methods:

(A) Normal method (Steaming):

  1. Remove skin from the chicken, trim excess fat and rinse. Pat dry with kitchen towel.
  2. Place chicken in a mixing bowl and add in seasonings. Mix well until the chicken is coated thoroughly. Cover the bowl with cling wrap and keep in the fridge to marinate for at least 1 hour.
  3. Steam chicken at high heat for 20 minutes or until cooked and tender.
  4. Remove from the steamer and leave the chicken to cool down before cutting it into pieces.
  5. Arrange the chicken chunks onto a serving platter.
  6. Pour the chicken sauce (the liquid on the steaming tray) into a wok and bring it to a boil. Simmer for a while and then thicken with cornflour solution. Pour over the chicken chunks and serve immediately.

(B) AMC methods:

  1. Follow step 1 and 2 from normal method.
  2. Arrange the chicken neatly in a AMC cooking pot/ wok. Cover with lid.
  3. Heat up the pot/ wok. Under medium low heat, cook the chicken (with lid) until the timer pointer reaches 3 o’clock direction.
  4. Switch off the heat. Wait till the timer pointer returns to 12 o’clock direction before opening the lid.
  5. Remove chicken from the AMC cooking pot/ wok and leave it to cool down before cutting it into bite-sized pieces.
  6. Follow step 5 from normal method.
  7. Heat up the chicken sauce (the liquid during the cooking) in the AMC cooking pot/ wok and bring it to a boil. Simmer for a while and then thicken with cornflour solution. Pour over the chicken chunks and serve immediately.

Notes:

  1. You can leave the skins intact if you don’t mind the extra calories.
  2. Use a fork to pierce a few holes onto the chicken so that the seasonings can penetrate the chicken thoroughly. But it is is optional.
  3. Leave the leftover sauce aside and only cook it just before serving. If the sauce is quite thick, then there is no need to thicken it anymore.
  4. Remember to cool down the chicken before cutting it into bite-sized pieces.
  5. To make the sauce more flavourful, sauté some chopped onion and then add in the sauce for cooking. For AMC method, sauté the chopped onion in step 2 and cook together with the chicken.

    Aww, your son so sweet :). Never cooked with hoisin sauce. I am always a little reluctant buying new sauces in case i dont like them and they end up hidden for ages at the back of the fridge or cupboard heheh. But the chicken looks delish so maybe next trip to tesco will grab a bottle of hoisin to try

    Oh ya, I think the holiday school breaks are so tough when you have little kids. We spent the last week struggling to entertain Haley (and Trevor.) Today was a joyous occasion when her regular scheduled resumed, but I am dreading Christmas break, which is TWO weeks long. Give me strength!

    Hoisin sauce is an item I ALWAYS have stocked in my pantry. I actually just used it the other day. Mixed it with a little sesame oil and orange marmalade and slow cooked some pork in the dressing. Yum.

    Hi, u have included cornflour solution under seasonings, and also mentioned in your recipe to thicken chicken sauce with cornflour solution when simmering the sauce. Do I add in the cornflour solution to the seasonings when I marinate the chicken?

    May I also know the reason for cutting the chicken after it is steamed?

      Mei Ling: The cornflour solution is used for thickening (step 6 of normal method) and not for marinating the chicken (step 2 of normal method). Sorry for the confusion. After steaming, you can either serve the whole chicken or cut it into pieces. But the latter will look more presentable and easier to consume with rice or noodles, just like those chicken sold for chicken rice. Hope I had answered your questions correctly. 😉
